We are surrounded in the Western World by so many sweet breakfasts – pancakes, waffles, sugar-loaded cereals. I wanted to make a breakfast option for those who want that comforting breakfast plate without the sugar rush. These Buckwheat Crepes with Tamarind Apple Jam and sunflower butter are the perfect way to start the day while keeping your blood sugar and cravings stable!

Buckwheat is a seed in the rhubarb and sorrel family. It is a gluten-free whole grain that works especially to balance Kapha dosha (Earth and Water energy). This means that it is great for weight loss, diabetics, edema, swelling, and congestion. It is a heating grain that helps to clear and open up the channels of nutrition and blood in the body. Because it is a warming grain, it also balances Vata dosha when used sparingly. The Tamarind Apple Jam helps to make this dish slightly sweet and more nourishing for Vata dosha.

High in Fire energy, cinnamon is a perfect heating spice to warm an imbalanced “Air” element (Vata) and melt excess “Earth/Water” elements (Kapha). It is great for keeping the blood sugar stable, dissolving excess fat, reducing headaches, reducing lethargy, and reducing anxiety.

Description

These Buckwheat Crepes are vegan, gluten free, soy free, and nut free. This recipe is Vata-pacifying and Kapha-pacifying.

Ingredients

Scale
  • 1/2 cup buckwheat
  • 1/2 cup water
  • 1 tsp ground flax seed
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger powder
  • Ghee/oil for cooking

Instructions

  1. Mix all ingredients in a bowl. Let mixture sit for 8-10 minutes.
  2. When ready to cook, put ghee/oil on a pan on medium heat. Take three tablespoons of batter and spread thin with the back of a spoon.
  3. When bubbles start to appear on the top side, carefully flip crepe and cook other side for a few minutes. Remove and fill with my Tamarind Apple Chutney and some sunflower butter. Vata types can top with tahini!
