These are the perfect treat to have for a holiday dinner, but you can enjoy them all year long. They are low sugar and low fat, as well! It satisfies the sweet tooth without greatly imbalancing the blood sugar. This dessert uses TWO highly sattvic, tridoshic ingredients: coconut and blossom flower water. Sattvic food promotes peace and balance for the body and the mind. Tridoshic food means it can be regularly enjoyed by all Ayurvedic body types.

These Orange Blossom Coconut Macaroons with Toasted Almond are raw, vegan, gluten free, soy free, and (optionally) nut free. They are low sugar AND low fat! This recipe balances Vata dosha, Pitta dosha, and Kapha dosha. It is a delicious and easy Ayurvedic, tridoshic dessert.

Ingredients
- 3 cups unsweetened Shredded Coconut
- 4 tbsp unrefined cane syrup (coconut nectar also works)
- 4 tbsp coconut oil (melted)
- 1 tsp Blossom Flower Water
- Topping: Orange Jam and 10-12 Toasted Almonds (+2 tsp coconut oil for toasting)
Instructions
- In a food processor, blitz the coconut until it is broken down into very small shreds. Let some texture (do not turn into flour).
- Add in the syrup, oil, and blossom water. Blitz until well combined.
- Place the mixture in a bowl and place in the freezer for 5-8 minutes. This will allow the coconut oil to harden so you can work with the mixture.
- While you are waiting, add 10-12 almonds to the food processor and break down into small chunks.
- In a pan, add 2 tsp of coconut oil and heat in low-medium, add nuts and toast for a few minutes until fragrant.
- Test the coconut dough to see if it stays together when you squeeze a small amount in your palm. If ready, squeeze into little balls with your hands. The mixture is delicate.
- Place the balls on a serving dish and top with orange jam and toasted almonds. Enjoy!
